A varietal of Oolong tea that originates in the Wu Yi mountains. This is a darker Oolong tea due to higher oxidization. The color in the cup also is much darker that green Oolong varieties. The liquor has more body and slightly earthy in character. Wu Yi Oolong is also called Rock tea. With very large rolled leaves, and more color than most Oolongs and is approximately 70% oxidized. Preparation – 3 grams in 10 ounces water. Steep for 5 minutes at 200F. Servings per 4 oz – 70 (two infusions)
